Ingredients

  • 8 oz rice noodles
  • 1 lb lamb, thinly sliced
  • 2 grapefruits, peeled and segmented
  • 1 cup shredded carrots
  • 1/2 cup chopped mint leaves
  • dressing:
  • 1/4 cup soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp honey
  • 1 tbsp grated ginger
  • 1 clove garlic, minced
  • 2 tbsp sesame oil

Instructions

  1. Cook the rice noodles according to package instructions. Drain and rinse with cold water. Set aside.

  2. In a large skillet, heat some oil over medium-high heat. Add the sliced lamb and cook until browned and cooked to your desired doneness. Remove from the skillet and set aside.

  3. In a small bowl, whisk together the soy sauce, rice vinegar, honey, grated ginger, minced garlic, and sesame oil to make the dressing.

  4. In a large bowl, combine the cooked rice noodles, cooked lamb, grapefruit segments, shredded carrots, and chopped mint leaves.

  5. Pour the dressing over the salad and toss to coat everything evenly.

  6. Serve the lamb and grapefruit noodle salad immediately and enjoy!
