How To Make Lamb & grapefruit noodle salad with ginger dressing

Ingredients
- 8 oz rice noodles
- 1 lb lamb, thinly sliced
- 2 grapefruits, peeled and segmented
- 1 cup shredded carrots
- 1/2 cup chopped mint leaves
- dressing:
- 1/4 cup soy sauce
- 2 tbsp rice vinegar
- 1 tbsp honey
- 1 tbsp grated ginger
- 1 clove garlic, minced
- 2 tbsp sesame oil
Instructions

Cook the rice noodles according to package instructions. Drain and rinse with cold water. Set aside.

In a large skillet, heat some oil over medium-high heat. Add the sliced lamb and cook until browned and cooked to your desired doneness. Remove from the skillet and set aside.

In a small bowl, whisk together the soy sauce, rice vinegar, honey, grated ginger, minced garlic, and sesame oil to make the dressing.

In a large bowl, combine the cooked rice noodles, cooked lamb, grapefruit segments, shredded carrots, and chopped mint leaves.

Pour the dressing over the salad and toss to coat everything evenly.
