Ingredients

  • 1 bunch of kale, stems removed and chopped
  • 1/4 cup tahini
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons olive oil
  • 1 clove of garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional toppings: chopped almonds, dried cranberries

Instructions

  1. In a small bowl, whisk together tahini, lemon juice, olive oil, garlic, salt, and black pepper to make the dressing.

  2. In a large salad bowl, add the chopped kale.

  3. Pour the dressing over the kale and massage it into the leaves for a few minutes until the kale starts to soften.

  4. Let the kale sit for about 10 minutes to allow the flavors to meld together.

  5. Optional: Add your choice of toppings such as chopped almonds or dried cranberries.

  6. Serve the kale salad as a side dish or as a main course.
