  • 8 cups kale, chopped
  • 2 ripe avocados, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup sunflower seeds
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • Salt and pepper to taste


  1. In a large bowl, combine the chopped kale, diced avocado, halved cherry tomatoes, thinly sliced red onion, crumbled feta cheese, and sunflower seeds.

  2. In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper.

  3. Pour the dressing over the kale salad and toss well to coat.
