  • 4 cups mixed salad greens
  • 1 cup honeyed chorizo, sliced
  • 1 cup manchego cheese, shaved
  • 1/4 cup honey
  • 2 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • Salt and pepper, to taste


  1. In a large bowl, combine the salad greens, honeyed chorizo, and manchego cheese.

  2. In a small bowl, whisk together the honey, olive oil, balsamic vinegar, salt, and pepper to make the dressing.

  3. Drizzle the dressing over the salad and toss to combine.

  4. Serve immediately.
