How To Make Honey Mustard Warm Potato Salad

Instead of the typically heavy potato and mayonnaise salads, this potato salad is dressed with a honey mustard dressing with various herbs and spices.

Total: 1 hour



  • 2lbsbaby potatoes,halved
  • 2tbspbutter,melted
  • 3tbspolive oil
  • 2garlic cloves,minced
  • salt and pepper
  • ½red onion,finely sliced
  • 1tspfresh thyme leaves,or ½ tsp dried thyme into Dressing

For Honey Mustard Dressing:

  • tbspdijon mustard
  • 2tspwholegrain mustard
  • 2tbsphoney
  • 2tbspcider vinegar
  • 2tbspolive oil
  • ¼tspsalt and pepper


  1. Preheat oven to 350 degrees F.

  2. Place potatoes in a bowl. Add butter, olive oil, garlic, salt and pepper. Toss well to combine.

  3. Spread potatoes out on a tray. Roast for 40 minutes until golden on the outside and soft inside, flipping once halfway.

  4. Meanwhile, place dressing ingredients in a jar. Shake very well to combine.

  5. When potatoes are cooked, transfer to a bowl. Add onion and fresh thyme, pour dressing over potatoes, and toss. Serve warm.
