How To Make Herbed Chicken, Peach & Feta Salad

Ingredients
- 2 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 4 cups mixed salad greens
- 2 peaches, sliced
- 1/2 cup crumbled feta cheese
- 1/4 cup chopped fresh basil
- 1/4 cup chopped fresh mint
- 2 tablespoons balsamic vinegar
- 2 tablespoons extra-virgin olive oil
Instructions

Preheat grill or grill pan to medium-high heat.

Season chicken breasts with olive oil, dried oregano, dried thyme, salt, and pepper.

Grill chicken for 6-8 minutes per side until cooked through. Let it rest for a few minutes, then slice.

In a large bowl, combine mixed salad greens, sliced peaches, crumbled feta cheese, chopped fresh basil, and chopped fresh mint.

In a separate small bowl, whisk together balsamic vinegar and extra-virgin olive oil. Drizzle over the salad and toss to coat.

Arrange the grilled chicken slices on top of the salad.
