  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 4 cups mixed salad greens
  • 2 peaches, sliced
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped fresh basil
  • 1/4 cup chopped fresh mint
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons extra-virgin olive oil


  1. Preheat grill or grill pan to medium-high heat.

  2. Season chicken breasts with olive oil, dried oregano, dried thyme, salt, and pepper.

  3. Grill chicken for 6-8 minutes per side until cooked through. Let it rest for a few minutes, then slice.

  4. In a large bowl, combine mixed salad greens, sliced peaches, crumbled feta cheese, chopped fresh basil, and chopped fresh mint.

  5. In a separate small bowl, whisk together balsamic vinegar and extra-virgin olive oil. Drizzle over the salad and toss to coat.

  6. Arrange the grilled chicken slices on top of the salad.

  7. Serve and enjoy!
