How To Make Heirloom Beetroot & Feta Salad

  • 4 medium-sized heirloom beetroots
  • 150g feta cheese, crumbled
  • 1/4 cup walnuts, chopped
  • 2 cups mixed salad greens
  • 1/4 cup balsamic vinegar
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste


  1. Wash and peel the beetroot. Thinly slice or grate it and set aside.

  2. In a large bowl, whisk together the balsamic vinegar, olive oil, salt, and pepper.

  3. Add the sliced or grated beetroot to the bowl and toss well to combine.

  4. Add the mixed salad greens and toss again.

  5. Divide the salad into four plates and top each with crumbled feta cheese and chopped walnuts.

  6. Serve immediately and enjoy!
