How To Make Grilled Zucchini and Tomato Salad

This tomato salad will be the highlight of your spring dishes! Add some grilled zucchini for a smoky, neutral taste that goes well with the tomatoes.

Ingredients

  • 2zucchini,medium
  • 2tomatoes
  • Cooking spray
  • kosher salt
  • freshly ground black pepper
  • a few sprigs fresh parsley

Instructions

  1. Heat your grill to high flame.

  2. Wash zucchini and trim off the ends.

  3. Using a vegetable peeler slice the zucchini lengthwise in thin slices.

  4. Lightly spray with cooking spray and season with salt and pepper, to taste.

  5. Grill the zucchini ribbons on 1 side, until lightly marked and wilted for about 1 to 2 minutes.

  6. Remove and put on a platter and let cool slightly.

  7. Cut up tomatoes in large chunks, season with salt and pepper to taste.

  8. Arrange on a platter with zucchini and garnish with parsley sprigs.
