
How To Make Grilled Chicken Caesar Avocado Salad
This avocado salad with grilled chicken is re-interpreted version of the classic Caesar salad. It comes loaded with tomatoes and lettuce, too.

Ingredients
- 2chicken breasts,boneless skinless
- 2tbspolive oil
- 2tspItalian seasoning
- salt and pepper
- 4cupsromaine,chopped
- 1avocado,sliced
- 2cupscherry tomatoes,sliced in half
- 1cupcroutons
- ½cupparmesan,shaved, shredded will also work
- black pepper
For Asiago Caesar Dressing:
- 1tspdijon mustard
- 1tspworcestershire sauce
- 1clovegarlic,pressed
- ½tspblack pepper
- ¼cupmayonnaise
- ¼cupolive oil
- ½cupasiago cheese,shredded

Preheat a grill to medium high heat. Rub the chicken with olive oil, italian seasoning, and salt and pepper. Grill on each side 2 to 4 minutes until chicken is cooked and no longer pink. Slice the chicken and set aside.

In a large bowl add the chicken, romaine, avocado, cherry tomatoes, croutons, shaved parmesan and toss. Serve with homemade asiago dressing or store-bought dressing.
