How To Make Grilled Chicken Caesar Avocado Salad

This avocado salad with grilled chicken is re-interpreted version of the classic Caesar salad. It comes loaded with tomatoes and lettuce, too.

  • 2chicken breasts,boneless skinless
  • 2tbspolive oil
  • 2tspItalian seasoning
  • salt and pepper
  • 4cupsromaine,chopped
  • 1avocado,sliced
  • 2cupscherry tomatoes,sliced in half
  • 1cupcroutons
  • ½cupparmesan,shaved, shredded will also work
  • black pepper

For Asiago Caesar Dressing:

  • 1tspdijon mustard
  • 1tspworcestershire sauce
  • 1clovegarlic,pressed
  • ½tspblack pepper
  • ¼cupmayonnaise
  • ¼cupolive oil
  • ½cupasiago cheese,shredded


  1. Preheat a grill to medium high heat. Rub the chicken with olive oil, italian seasoning, and salt and pepper. Grill on each side 2 to 4 minutes until chicken is cooked and no longer pink. Slice the chicken and set aside.

  2. In a large bowl add the chicken, romaine, avocado, cherry tomatoes, croutons, shaved parmesan and toss. Serve with homemade asiago dressing or store-bought dressing.
