How To Make Green Bean and Spinach Salad

  • 2 lbs. fresh green beans
  • 1 pkg. fresh spinach leaves
  • 2 plum tomatoes
  • 1 red onion
  • 1 clove garlic, crushed
  • 1 can artichoke hearts
  • 1 can black olives
  • Fontina , chopped , or provolone cheese
  • 1 tsp. salt
  • ½ tsp. pepper
  • oregano
  • vinegar
  • oil


  1. Boil green beans until tender.
  2. Do not over boil. Let cool.
  3. In a serving bowl, slice tomatoes, onion, artichoke hearts, black olives, crushed garlic and cheese.
  4. Add green beans and spinach leaves.
  5. Toss lightly. Season with salt, pepper and oregano.
  6. Add vinegar and oil.
  7. Best if made the night before.
