Ingredients

  • 8 ounces penne pasta
  • 1 pound green beans, trimmed
  • 1 cup cherry tomatoes, halved
  • 1/2 cup pitted black olives, sliced
  • 2 tablespoons chopped fresh parsley
  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

  1. Cook the penne pasta according to package instructions. Drain and set aside.

  2. In a pot of boiling water, blanch the green beans for 3-4 minutes until crisp-tender. Drain and rinse with cold water.

  3. In a large bowl, combine the cooked penne, blanched green beans, cherry tomatoes, olives, and parsley.

  4. In a small bowl, whisk together the olive oil, red wine vinegar, minced garlic, salt, and pepper.

  5. Pour the dressing over the salad and toss to coat everything evenly.

  6. Serve the green bean and penne salad chilled or at room temperature.
