- 1cupquinoa,uncooked
- 2cupswater,or broth
- 1pintcherry tomatoes,diced
- ½cupred pepper,diced
- ½cupgreen pepper,diced
- 1cupcucumber,diced
- ½cupblack olives,sliced
- ¼cupred onion,diced
- 3ozfeta cheese
- â…“cupGreek dressing
- 1tbspparsley,chopped
Instructions

Prepare quinoa according to package directions. Cool.

In a large bowl, combine tomatoes, red and green peppers, cucumber, olives, red onion, feta cheese, and dressing. Toss to coat evenly.
