How To Make Greek Orzo Salad

Ingredients
- 1 cup orzo pasta
- 1 cup cherry tomatoes, halved
- 1/2 cup cucumber, diced
- 1/2 cup Kalamata olives, pitted and halved
- 1/4 cup red onion, thinly sliced
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 1/2 cup feta cheese, crumbled
- 2 tablespoons olive oil
- Juice of 1 lemon
- Salt and pepper to taste
Instructions

Cook the orzo pasta according to package instructions. Drain and rinse with cold water.

In a large bowl, combine the cooked orzo, cherry tomatoes, cucumber, Kalamata olives, red onion, parsley, mint, and feta cheese.

In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Pour the dressing over the salad and toss to combine.
