How To Make Greek Chickpea Salad
Switch your salad to Greek-style with this chickpea salad made with crunchy chickpeas, cucumbers, and salty feta cheese, for the tastiest light meal!

Ingredients
- 15ozchickpeas,(1 can), rinsed and drained
- 2cupsPersian cucumber,diced
- 1green bell pepper,sliced
- 1⅓cupsgrape tomatoes,halved
- 20kalamata olives,or gaeta olives
- ¼cupred onion,sliced lengthwise
- 4ozfresh feta,sliced thick
For Dressing:
- 2fresh lemons,juiced
- 2tbspextra virgin olive oil
- 2tspfresh oregano leaves,minced
- ¼tspkosher salt
- freshly ground black pepper,to taste
Instructions

In each of four 4-cup containers or bowls, arrange ⅓ cup of chickpeas, ½ cup of cucumber, ¼ of green pepper, ⅓ cup of tomato, olives, and red onion. Top with the Feta cheese.

In a small bowl, whisk the lemon juice, olive oil, oregano, salt, and pepper.

Drizzle about 1½ tablespoons of dressing with each salad.
