  • 2 tsp lemon juice, fresh
  • 1 tsp olive oil
  • 2 tbsp white wine vinegar
  • 4 cups spinach leaves
  • 2 large tomatoes, chopped
  • ¼ cup goat cheese, crumbled
  • 1 tbsp pine nuts, toasted
  • salt , to taste
  • pepper , to taste


  1. Whisk lemon juice, oil, and vinegar together.

  2. Add salt & pepper to taste.

  3. In a large bowl toss spinach leaves with dressing.

  4. Add the tomatoes and goat cheese, mix gently to flavor the entire salad.
