Ingredients

  • 4 beetroots
  • 100g goat’s cheese
  • 100g mixed salad greens
  • 1/4 cup walnuts, chopped
  • 2 tbsp balsamic vinegar
  • 2 tbsp olive oil
  • Salt and pepper, to taste

Instructions

  1. Peel and slice the beetroots into thin rounds.

  2. In a bowl, combine the salad greens, beetroots, and walnuts.

  3. In a small jar, mix the balsamic vinegar, olive oil, salt, and pepper to make the dressing.

  4. Drizzle the dressing over the salad and toss gently to combine.

  5. Crumble the goat’s cheese on top of the salad.

  6. Serve chilled.
