How To Make Garden Gazpacho Salad
This fresh gazpacho salad is the perfect summer dish. Filled with chicken, cucumber, & tomatoes, the dish is finished off with a veggie-tomato cocktail.
Ingredients
- 16ozfusilli spiral pasta,(1 package)
- 2cupschicken,cooked, chopped
- 1small cucumber,chopped
- 1red bell pepper,chopped
- 1large tomato,chopped
- 1clovegarlic,chopped
- ¾cupspicy tomato vegetable juice cocktail
- ¼cuplemon juice
- ½tspground black pepper
- ¼tspsalt
Instructions

Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.

Mix the pasta with the chicken, cucumber, bell pepper, tomato, and garlic.

Pour the tomato-vegetable juice cocktail and lemon juice over the salad; gently toss to coat.

Season with black pepper and salt; serve warm or chilled.
