How To Make Garden Gazpacho Salad

This fresh gazpacho salad is the perfect summer dish. Filled with chicken, cucumber, & tomatoes, the dish is finished off with a veggie-tomato cocktail.

Preparation: 15 minutes
Cooking: 20 minutes
Total: 35 minutes

Ingredients

  • 16ozfusilli spiral pasta,(1 package)
  • 2cupschicken,cooked, chopped
  • 1small cucumber,chopped
  • 1red bell pepper,chopped
  • 1large tomato,chopped
  • 1clovegarlic,chopped
  • ¾cupspicy tomato vegetable juice cocktail
  • ¼cuplemon juice
  • ½tspground black pepper
  • ¼tspsalt

Instructions

  1. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.

  2. Mix the pasta with the chicken, cucumber, bell pepper, tomato, and garlic.

  3. Pour the tomato-vegetable juice cocktail and lemon juice over the salad; gently toss to coat.

  4. Season with black pepper and salt; serve warm or chilled.
