How To Make Garden Gazpacho Salad

Enjoy fresh bites of this healthy gazpacho salad, loaded with tender chicken and crisp veggies, all coated in a veggie-tomato cocktail, for a tastier meal!

  • 16ozfusilli spiral pasta,(1 package)
  • 2cupschicken,cooked, chopped
  • 1small cucumber,chopped
  • 1red bell pepper,chopped
  • 1large tomato,chopped
  • 1garlic clove,chopped
  • ¾cupspicy tomato vegetable juice cocktail
  • ¼cuplemon juice
  • ½tspground black pepper
  • ¼tspsalt


  1. Bring a large pot of lightly salted water to a boil. Add the pasta and cook for 8 to 10 minutes or until al dente, then drain.

  2. Mix the pasta with the chicken, cucumber, bell pepper, tomato, and garlic.

  3. Pour the tomato-vegetable juice cocktail and lemon juice over the salad, then gently toss to coat.

  4. Season with black pepper and salt, then serve warm or chilled. Enjoy!
