A spinach salad recipe with the right blend of fruity toppings

Ingredients

  • 1 cantaloupe , half, seeded and skin removed
  • 7 cups fresh spinach, torn
  • 1 cup fresh mushrooms, chopped
  • 1 cup red onion, thinly sliced
  • ½ cup green grapes, halved

Dressing

  • 3 tbsp sugar
  • 2 tbsp orange juice
  • 2 tbsp vinegar
  • 1 tbsp onion, chopped
  • â…“ cup vegetable oil
  • 1 tsp poppy seeds
  • â…“ cup pecans, toasted, chopped
  • dash pepper

Instructions

  1. Cut melon half in ½ inch rings, then into 1-inch pieces. Place in a bowl.
  2. Add spinach, mushrooms, onion and grapes.
  3. Chill for at least 2 hours.
  4. Place sugar, orange juice, vinegar, onion, orange peel and pepper in a blender, cover and blend until smooth.
  5. With blender running, gradually add oil until slightly thickened.
  6. Stir in poppy seeds.
  7. Cover and chill.
  8. Just before serving, pour dressing over salad and toss.
  9. Top with pecans. Serve.

Recipe Notes

You can substitute other fruit such as strawberries or blueberries for the grapes, or other types of melon.
