
How To Make Fruity Quinoa Salad
Bursting with a medley of fruity flavors, this quinoa salad is packed with tart blueberries, mangos, and zesty orange; all tossed in a sweet-tangy dressing!
Serves:
Ingredients
- 1cupquinoa,uncooked
- 1large mango
- 6ozraspberries
- 2kiwis
- 15ozmandarin oranges,well drained
- 1cupfresh blueberries
For Dressing:
- 1large orange
- 2tbsporange juice
- 1tsporange zest
- 1large lemon
- 1tbsplemon juice
- ¼tsplemon zest
- 1¼tbsphoney
- 1tspdijon mustard
- ¼cupvegetable oil,or olive oil
- ¼tspsalt
- â…›tsppepper
- fresh limes,optional
Instructions

Prepare the quinoa according to package directions.

Peel and chop the mango. Wash the raspberries. Peel the kiwis and slice or chop. Drain the mandarin oranges. Wash and dry the blueberries.

Allow the quinoa to cool completely and add all the fruits. Gently mix together.
Dressing:

Combine the orange juice and zest, lemon juice and zest, honey, Dijon mustard, and salt and pepper in a small food processor or blender. Blend until smooth, making sure the honey is incorporated. Blend in the vegetable oil. Taste and adjust to preference.

Pour the dressing over the salad and mix. If desired, squeeze a wedge of lime over the salad.
