This fresh tomato salad tossed with red onions, cheese, herbs, and a dash of olive oil pops with color and flavor. Plus, it takes only 10 minutes to make!

  • 2pintsgrape tomatoes,halved or 3 cups diced tomatoes
  • ¼cupred onion,thinly sliced
  • 1tbspfresh herbs,such as basil and fresh oregano
  • 3tbspolive oil
  • 1tbspred wine vinegar
  • salt & pepper,to taste
  • ½cupbocconcini,sliced or diced, optional


  1. Place tomatoes, red onion, and bocconcini in a shallow bowl.

  2. Drizzle with olive oil and red wine vinegar. Toss to combine.

  3. Season with salt, pepper and fresh herbs to taste.
