How To Make French Carrot Salad

This carrot salad yields fresh flavors from crunchy carrots, tangy lemon, and sweet honey, for a light and vegan-friendly dish!

For Carrot Salad:

  • 1lbcarrots,carrots
  • 2tbspchives,or chopped green onion, finely snipped
  • 2tbspfresh parsley,finely chopped
  • cupschickpeas,cooked, optional

For Dressing:

  • 2tbspextra-virgin olive oil
  • 2tbsplemon juice
  • 2tsphoney
  • 1tspdijon mustard
  • ½tspground cumin
  • ¼tspfine sea salt


  1. Grate the carrots on the large holes of a box grater.*

  2. Place the carrots in a medium serving bowl. Add the chives, parsley, and optional chickpeas to the bowl.


  1. Whisk all of the ingredients together in a small bowl until completely blended.

  2. Pour the dressing over the carrot mixture and stir until the mixture is evenly coated in the dressing.

  3. Allow the salad to marinate for 20 minutes.

  4. Toss again before serving. Enjoy!

  • *Or use short strokes with a julienne peeler, or process them in a food processor fitted with a grating attachment.
  • This salad keeps well in the refrigerator, covered for about 4 days.
