How To Make Fiesta Bean Salad

Enjoy a fiesta of flavors with our bean salad made with black beans, chickpeas, avocados, cilantro, and avocado all tossed in a cumin plus lime vinaigrette!

  • 2garlic cloves,minced
  • 3tbsplime juice,fresh
  • 1tbspolive oil
  • 1tspcumin
  • pinch of red pepper flakes,crushed
  • ½tspsalt
  • 15ozblack beans,canned, rinsed, drained
  • 1cupchickpeas,canned, rinsed, drained
  • 1cupcherry tomatoes,halved
  • ¼cupred onion,minced, finely diced
  • ¼cupcilantro,chopped
  • 1medium avocado,diced

Instructions

  1. In a large bowl, combine the garlic, lime juice, oil, cumin, crushed red pepper, and salt.

  2. Add the black beans, chickpeas, tomato, onion, and cilantro. Mix well.

  3. When ready to eat, gently mix in the avocado and serve right away.
