Ingredients

  • 4 oz boneless skinless chicken breast
  • ¼ cup onion, sliced
  • ½ cup green pepper, sliced
  • 3 cup dark leafy greens, washed and torn into bite-size pieces
  • 2 tbsp salsa
  • ½ tbsp reduced-sodium soy sauce , or lemon juice
  • 1 dash garlic powder
  • 1 tbsp fat-free sour cream, optional

Instructions

  1. Preheat non-stick skillet over medium heat.
  2. Sauté chicken in lemon juice or soy sauce can use leftover chicken breast until heated through.
  3. Increase heat to medium-high to high heat and add onions, peppers, and garlic powder.
  4. Allow vegetables to char slightly.
  5. Serve over bed of lettuce and top with salsa and fat-free sour cream.
