How To Make Farro Salad with Feta

Ingredients
- 2cupscooked farro
- 1cupcucumberdiced
- 1cupchickpeascanned, drained then rinsed
- ½cupred peppersroasted, diced
- ¼cupred onionfinely chopped
- ½cupcrumbled feta cheese
- ½cupkalamata olivessliced
- ¼cupparsleychopped
- 6tbspolive oil
- 1tbsplemon juice
- 1tbspred wine vinegar
- 1tspdijon mustard
- ¼tspgarlic powder
- ¼tspdried oregano
- Salt and pepperto taste
Instructions

Place the farro, cucumbers, chickpeas, roasted peppers, red onion, feta cheese, olives, and parsley in a large bowl.

In a small bowl, whisk together the olive oil, lemon juice, red wine vinegar, Dijon mustard, garlic powder, oregano, and salt and pepper.
