How To Make Farro and Kale Salad with Grapes Feta and White Wine Vinaigrette

Full of whole-grain goodness, this farro & kale salad has some sweet and salty contrast from the grapes & feta. All this is tossed in a white wine dressing.

Ingredients

For Dressing:

  • ¼cupolive oil,(+ 2 tbsp)
  • 3tbspwhite wine vinegar
  • 2tbsphoney
  • tspdijon mustard
  • 1tbspshallot,minced
  • salt

For Salad:

  • ¾cupdry farro,cooked according to directions on package and cooled
  • 5ozbaby kale
  • 12ozred grapes,halved, (about 2 cups if small or 3 if large)
  • 4ozfeta,crumbled
  • ¾cupwalnuts,chopped and toasted

Instructions

Dressing:

  1. For the dressing – In a jar combine olive oil, white wine vinegar, honey, mustard, shallot and season with salt to taste. 

  2. Cover with lid and shake to blend. Chill until ready to serve.

Salad:

  1. Add kale, cooked farro, grapes, feta and walnuts to a salad bowl. Pour over dressing and toss to evenly coat. Serve immediately.
