Ingredients

  • 6 boiled eggs, sliced
  • 1 cup fresh parsley, chopped
  • 2 cups watercress leaves
  • 1/4 cup Greek yogurt
  • 2 tablespoons lemon juice
  • 1 tablespoon dijon mustard
  • Salt and pepper, to taste

Instructions

  1. In a large bowl, combine the boiled eggs and chopped parsley.

  2. In a separate bowl, whisk together the Greek yogurt, lemon juice, dijon mustard, salt, and pepper to make the watercress dressing.

  3. Pour the watercress dressing over the eggs and parsley and toss well to coat.

  4. Divide the salad onto four plates and garnish with watercress leaves.

  5. Serve and enjoy!
