- 1headRomaine lettucechopped into bite-sized pieces
- half of a small red onionpeeled and thinly-sliced
- 14ozjars quartered artichoke heartsdrained and roughly chopped
- 12ozjar roasted red peppersdrained and diced
- ½cuptoasted pine nuts
- 1batchzesty red wine vinaigrette
- freshly-grated Parmesan cheeseoptional garnish
For The Zesty Red Wine Vinaigrette
- ½cupparmesan cheesegrated
- ⅓cupextra-virgin olive oil
- ¼cupred-wine vinegar
- 1tspItalian seasoningstore-bought or homemade
- ½tspkosher salt
- ½tspblack pepperfreshly-cracked
- ¼tspgarlic powder

Salad:

Add all ingredients together in a large bowl, and toss until evenly combined. Serve immediately, garnished with extra Parmesan cheese if desired.
TO MAKE THE VINAIGRETTE:

Whisk all ingredients together until combined. Use immediately.
