How To Make Easy Quinoa Salad

Ingredients
- 1 cup quinoa
- 2 cups water
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, thinly sliced
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 1/4 cup fresh lemon juice
- 2 tbsp extra-virgin olive oil
- Salt and pepper to taste
Instructions

Rinse the quinoa under cold water.

In a saucepan, bring 2 cups of water to a boil. Add the quinoa and reduce heat to low. Cover and simmer for 15 minutes or until the water is absorbed.

Remove the quinoa from heat and let it cool.

In a large bowl, combine the cooked quinoa, cherry tomatoes, cucumber, red onion, parsley, and mint.

In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper. Pour the dressing over the quinoa salad and toss to combine.

Serve chilled and enjoy!
