How To Make Easy Orzo Pasta Salad

A lemony dressing flavors this Mediterranean-flavored orzo pasta salad recipe that’s filled with garbanzo beans, tomatoes, and diced onions. It’s superb!

Cooking: 10 minutes
Total: 30 minutes



Orzo Pasta Salad:

  • cupsorzo
  • 15ozgarbanzo beanschickpeas, drained and rinsed
  • cupred onionfinely chopped
  • 2cupsfresh spinachchopped
  • cupstomatoesdiced
  • ½cupfeta cheesecrumbled


  • 3tbspred wine vinegar
  • 1tbspFresh Lemon Juice
  • ½tspdijon mustard
  • 1tspsugar
  • tspgarlic powder
  • cupolive oil


  1. Cook orzo for 10 minutes until tender. Cool.

  2. Combine all dressing ingredients in a small bowl and whisk.

  3. Combine orzo with remaining salad ingredients.

  4. Toss with dressing and season with salt and pepper.

  5. Refrigerate at least 1 hour before serving
