A refreshing pasta salad is just what you need for lunch today! Try this filling salad of fresh vegetables and tangy dressing for a full meal.

Ingredients

For Pasta Salad:

  • 1lbrotini pasta
  • 1cucumberchopped
  • 1cupgrape tomatoeshalved
  • 1red bell pepperchopped
  • ½red onionthinly sliced
  • 4ozFeta cheesecubed
  • ½cupKalamata olivespitted and cut in half

For Dressing:

  • ¼cupolive oil
  • 3tbspred wine vinegar
  • ½tbspdried oregano
  • ½tspgarlic powder
  • ¼tspkosher salt
  • tspground black pepper
  • 2tbspfresh dillfinely chopped

Instructions

Pasta Salad:

  1. In a large pot of boiling water, cook the rotini according to the package instructions.

  2. Drain them, then place in a large bowl.

  3. Add the cucumber, tomatoes, bell pepper, red onion, feta and olives to the bowl.

Dressing:

  1. Combine the olive oil, red wine vinegar, oregano, garlic powder, salt, pepper, and dill in a small bowl.

  2. Whisk to combine.

  3. Pour the dressing the bowl of pasta salad, then toss together carefully.

  4. Serve, and enjoy!
