How To Make Easy Chinese Chicken Salad Recipe

Ingredients
- 2 boneless, skinless chicken breasts
- 4 cups mixed salad greens
- 1 cup shredded carrots
- 1 cup shredded cabbage
- 1/2 cup chopped red bell pepper
- 1/2 cup chopped cucumber
- 1/4 cup chopped green onions
- 1/4 cup sliced almonds
- 1/4 cup chopped cilantro
- dressing:
- 3 tablespoons soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon honey
- 1 tablespoon sesame oil
- 1 teaspoon grated ginger
- 1 clove garlic, minced
- 1/4 teaspoon red pepper flakes
Instructions

Preheat the grill or stovetop grill pan over medium-high heat.

Season the chicken breasts with salt and pepper. Grill for 6-8 minutes per side or until cooked through. Let cool, then slice into thin strips.

In a large salad bowl, combine the salad greens, carrots, cabbage, bell pepper, cucumber, green onions, almonds, and cilantro.

In a small bowl, whisk together the soy sauce, rice vinegar, honey, sesame oil, ginger, garlic, and red pepper flakes.

Add the sliced chicken to the salad bowl and pour the dressing over the top. Toss to combine.
