This colorful detox salad made with fresh veggies and drizzled with savory Japanese carrot-ginger dressing will help you kickstart healthy eating.

For Detox Salad:

  • 3cupskale leavesfinely-chopped
  • 2cupsbroccoli floretsfinely-chopped
  • 2cupsred cabbagefinely-chopped
  • 1cupcarrotsshredded
  • 1cupfresh cilantro leavesroughly-chopped
  • ½cupslivered almondstoasted
  • cupgreen onionsthinly-sliced
  • 1pcavocadopeeled, pitted and diced

For Carrot-Ginger Dressing:

  • 1largecarrotpeeled and roughly-chopped
  • ¼cuprice wine vinegar
  • 2tbspavocado oil
  • 1tbspfresh gingerfinely-chopped
  • 1tbsphoney
  • 1tbspwhite miso
  • ½tsptoasted sesame oil
  • Kosher saltto taste
  • black pepperto taste


Detox Salad:

  1. Add all ingredients together in a large bowl, and toss to combine. Serve immediately.

Carrot-Ginger Dressing:

  1. Add all ingredients to a blender or food processor, and pulse until completely smooth.

  2. Season to taste with salt and pepper, and/or add extra honey for a sweeter dressing.

  3. Serve immediately or refrigerate in a sealed container for up to 1 week.
