Cucumber Pasta Salad Recipe

This recipe won’t take much time at all. All you need is a blender and you’re good to go with this meal for picnics or if you’re looking for a healthy meal to crave into.

How To Make Cucumber Pasta Salad

  • 1 box spiral pasta (cooked, drained and cooled)
  • 1 large cucumber (cut in chunks)
  • 1 onion (cut in chunks)
  • 1 1/2 cup vinegar
  • 1 1/2 cup sugar
  • 2 tsp mustard
  • 1 tsp salt
  1. Cut cucumber with peel, and onion in chunks and put in blender.
  2. Add rest of ingredients and blend.
  3. Pour over cooked pasta and let sit for 12 hours in refrigerator before serving.

Ingredients

Salad:

  • 1-10 oz large cucumber, deseeded & cut in chunks
  • ½ cup red onions, chopped
  • ½ lb penne or fusilli pasta, cooked, drained, & cooled
  • ¼ cup cherry tomatoes, halved

Dressing:

  • 1-10 oz large cucumber, deseeded & cut in chunks
  • 3 garlic cloves, peeled & bruised
  • ½ cup white wine or rice vinegar
  • cup honey
  • tbsp Dijon or grain mustard
  • ½ cup Greek-style Yoghurt
  • Salt & ground black pepper , to taste

Instructions

  1. Combine all ingredients for the dressing in a blender & puree until smooth
  2. Season to taste with salt & pepper. Adjust accordingly & set aside
  3. Combine all ingredients for the salad
  4. Add enough dressing to coat the vegetables. Toss to combine
  5. Serve
