  • 2 cans of chickpeas, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • Juice of 1 lemon
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • Salt and pepper to taste


  1. Preheat oven to 400°F (200°C).

  2. Place the drained and rinsed chickpeas on a baking sheet and drizzle with olive oil. Sprinkle with cumin, paprika, salt, and pepper. Toss to coat.

  3. Bake the chickpeas in the preheated oven for 20 minutes or until golden and crunchy.

  4. In a large bowl, combine the roasted chickpeas, cherry tomatoes, cucumber, bell pepper, red onion, and fresh parsley.

  5. In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper. Pour the dressing over the salad and toss to combine.

  6. Serve the crunchy chickpea salad fresh and enjoy!
