How To Make Creamed Goat’s Cheese & Roast Beetroot Salad

Ingredients
- 4 medium beets, peeled and diced
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 4 cups mixed greens
- 1 cup crumbled goat’s cheese
- 1/4 cup chopped walnuts
- 2 tbsp balsamic vinegar
- 1 tbsp honey
- 1 tbsp Dijon mustard
Instructions

Preheat the oven to 400°F (200°C).

In a large bowl, toss the diced beets with olive oil, salt, and black pepper.

Spread the beets on a baking sheet and roast for 40-45 minutes, or until tender.

In a small bowl, whisk together the balsamic vinegar, honey, and Dijon mustard.

In a separate bowl, combine the mixed greens, roasted beets, goat’s cheese, and walnuts.

Drizzle the balsamic dressing over the salad and toss to combine.
