For Salad:

  • 16ozbaby spinach
  • 1cupalmondssliced and toasted
  • 1cupcranberriesdried

For Sesame Seed Dressing:

  • ¼cupwhite wine vinegar
  • 2tbspapple cider vinegar
  • 3tbspwhite sugar
  • ½ cupolive oil
  • 3tbsphoney
  • 1tbspshallotfinely minced
  • 2tbspsesame seedstoasted
  • 1tbsppoppy seeds(optional)

Instructions

Sesame Seed Dressing:

  1. In a bowl or jar, whisk together the white wine vinegar, apple cider vinegar, and sugar until the sugar dissolves.

  2. Stir in the olive oil, honey, shallot, sesame seeds and optional poppy seeds until the mixture is well blended.

Salad:

  1. Add spinach, almonds, and cranberries to a salad bowl. Drizzle dressing over the salad and toss until well-coated.

  2. Serve immediately after adding the dressing.
