Ingredients

  • 8 cups mixed salad greens
  • 2 cups cooked chicken, chopped
  • 8 strips bacon, cooked and crumbled
  • 2 avocados, diced
  • 2 tomatoes, diced
  • 4 hard-boiled eggs, sliced
  • 1/2 cup crumbled blue cheese
  • 1/2 cup diced red onion
  • 1/4 cup chopped fresh chives
  • Salt and pepper to taste
  • for the dressing:
  • 1/4 cup red wine vinegar
  • 1/4 cup olive oil
  • 1 tablespoon Dijon mustard
  • 1 teaspoon honey
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the salad greens, chicken, bacon, avocados, tomatoes, eggs, blue cheese, red onion, and chives.

  2. In a small bowl, whisk together the red wine vinegar, olive oil, Dijon mustard, honey, salt, and pepper to make the dressing.

  3. Drizzle the dressing over the salad and toss to combine.

  4. Season with additional salt and pepper, if desired.

  5. Serve immediately.
