
How To Make Cobb Salad with Sherry Shallot Vinaigrette (Cosi Copycat)
This Cosi-inspired cobb salad is loaded with chicken, bacon, and hard-boiled eggs, plus tomatoes and mixed greens in sherry vinaigrette.

Ingredients
- 3grilled chicken breasts,cubed
- 8slicesbacon,cooked and crumbled
- 2large vine tomatoes,cut into 1-inch cubes
- 4eggs,hard boiled and chopped
- 2scallions,chopped finely
- ½cupcrumbled gorgonzola
- 11ozmixed greens
- 4tspshallot,(1 medium), minced
- 1clovegarlic,minced
- ½tspkosher salt
- ¼tspfreshly ground black pepper
- ¼cupsherry vinegar,or red wine vinegar
- ½cuplive oil
Instructions

In a small mason jar or in a bowl, add the shallot, garlic, kosher salt, fresh ground black pepper, sherry vinegar, and olive oil. Mix thoroughly.

If using a mason jar, just shake it for a good 20 to 30 seconds.

Layer each salad with a quarter of the remaining ingredients.

Serve with Cosi’s signature super secret flatbread or some crusty baguettes.
