Ingredients

For Honey Mustard Vinaigrette:

  • 2 garlic cloves, minced
  • 2 tbsp champagne vinegar
  • 3 tbsp honey
  • 2 tbsp dijon mustard
  • ¼ tsp salt
  • ¼ tsp fresh ground black pepper
  • ¼ cup olive oil

For Christmas Salad:

  • 12 oz fresh spring greens
  • â…” cup almonds, sliced
  • â…” cup feta cheese
  • 4 mandarin oranges, seedless, peeled, and segmented
  • 1 pomegranate , seeded

Instructions

Honey Mustard Vinaigrette:

  1. In a small bowl whisk together minced garlic, champagne vinegar, Dijon mustard, honey, salt and pepper.

  2. Slowly drizzle in olive oil; whisking continuously.

Christmas Salad:

  1. In a large bowl add spring green, sliced almonds, feta cheese, mandarin oranges and pomegranate arils.

  2. Drizzle the dressing over the salad and toss to coat.

  3. Serve and enjoy.
