Ingredients
For Honey Mustard Vinaigrette:
- 2 garlic cloves, minced
- 2 tbsp champagne vinegar
- 3 tbsp honey
- 2 tbsp dijon mustard
- ¼ tsp salt
- ¼ tsp fresh ground black pepper
- ¼ cup olive oil
For Christmas Salad:
- 12 oz fresh spring greens
- ⅔ cup almonds, sliced
- ⅔ cup feta cheese
- 4 mandarin oranges, seedless, peeled, and segmented
- 1 pomegranate , seeded
Instructions
Honey Mustard Vinaigrette:

In a small bowl whisk together minced garlic, champagne vinegar, Dijon mustard, honey, salt and pepper.

Slowly drizzle in olive oil; whisking continuously.
Christmas Salad:

In a large bowl add spring green, sliced almonds, feta cheese, mandarin oranges and pomegranate arils.

Drizzle the dressing over the salad and toss to coat.
