How To Make Chopped Salad with Shrimp and Bacon

Have a hearty and healthy chopped salad for breakfast or lunch tossed with filling ingredients such as shrimp, avocado, blue cheese, and bacon.

Ingredients

  • 4bacon slices,center cut, chopped
  • ½lbshrimp,peeled and deveined
  • 2garlic cloves,minced
  • 4ozbutter lettuce,chopped
  • 1corn on the cobb,small, grilled or roasted
  • 1ozblue cheese,or gorgonzola
  • ½cupcherry tomatoes,halved
  • 2ozavocado,diced, 1 half small haas
  • 2tspolive oil
  • kosher salt and black pepper,to taste

Instructions

  1. Heat a skillet over medium heat and add the bacon. Cook until crisp and the fat is rendered.

  2. Transfer the bacon to a paper towel using a slotted spoon.

  3. Remove all but 1 teaspoon of the bacon grease and discard the rest.

  4. Add the shrimp and garlic to the skillet and cook for 3 minutes until opaque. Remove and chop into bite-sized pieces.

  5. To assemble the salad, divide between 2 plates or toss everything together in a large bowl.

  6. Serve right away, drizzled with 1 teaspoon of olive oil, salt, and pepper over each salad.
