For Salad:

  • 3cupsromaine lettuce,coarsely chopped
  • 1cupchicken breast,cooked, chopped
  • ½cupmozzarella,fresh, cut into ½-inch pieces
  • ½cuptomato,chopped
  • ¾cupcucumber,chopped
  • 1cupchickpeas,drained, rinsed
  • ½cupbacon,cooked, crumbled
  • 1avocado,peeled, pitted and diced
  • ¼cupchives,thinly sliced

For Dressing:

  • 2tbsplemon juice
  • 2tbspdijon mustard
  • 3tbspred wine vinegar
  • 3tspgranulated sugar
  • 2tbspshallot,finely minced
  • ½tspdried oregano
  • 1tspdried parsley
  • cupolive oil

Instructions

  1. Place the lettuce, chicken, mozzarella, tomato, cucumber, chickpeas, bacon, avocado, and chives in a large bowl.

  2. In a small bowl, whisk together the lemon juice, Dijon mustard, red wine vinegar, granulated sugar, shallot, oregano, parsley and olive oil.

  3. Pour the dressing over the salad, then toss to coat.

  4. Serve, and enjoy!
