How To Make Chilli Chicken & Bacon Salad

Ingredients

  • 2 boneless, skinless chicken breasts
  • 4 slices of bacon
  • 1/4 cup of olive oil
  • 2 tbsp of chilli powder
  • 1 tsp of garlic powder
  • 1/2 tsp of salt
  • 1/4 tsp of black pepper
  • 4 cups of mixed salad greens
  • 1/4 cup of cherry tomatoes, halved
  • 1/4 cup of sliced red onions
  • 1/4 cup of crumbled feta cheese
  • 1/4 cup of sliced almonds

Instructions

  1. Preheat grill or grill pan to medium-high heat.

  2. In a small bowl, combine olive oil, chilli powder, garlic powder, salt, and black pepper.

  3. Brush the chicken breasts with the chilli powder mixture on both sides.

  4. Grill the chicken for 6-8 minutes per side, or until cooked through. Allow it to rest for a few minutes before slicing.

  5. Meanwhile, cook the bacon in a skillet over medium heat until crispy. Remove and drain on paper towels, then crumble.

  6. In a large bowl, toss together the salad greens, cherry tomatoes, red onions, feta cheese, sliced almonds, and crumbled bacon.

  7. Slice the grilled chicken and arrange it on top of the salad.

  8. Serve immediately and enjoy!
