How To Make Chickpea Tex-Mex Salad

What sets this Tex Mex salad apart is the lighter Greek yogurt dressing, that’s tossed with chickpeas and avocado for a delectably filling lunch meal!

  • ½cupsalsa
  • ½cupGreek yogurt
  • 2tspcanola oil
  • 1canchickpeas,drained and dried in a paper towel
  • ½tspcumin
  • ½tspdried oregano
  • 1pinchcayenne pepper
  • 6cupslettuce,chopped
  • 1cupgrape tomatoes
  • 1cupcorn
  • ½cupolives,sliced
  • avocado,diced into ½ inch chunks


  1. In a small bowl, mix the salsa and Greek yogurt, then set aside.

  2. Add the oil to the pan on medium high. Add the chickpeas, stir, add the cumin, oregano and cayenne pepper, then stir for 45 seconds. Remove from pan to paper towel.

  3. Add the lettuce, tomatoes, corn and olives to a large bowl and toss. Top with the seasoned chickpeas and avocado chunks.

  4. Pour over the salad dressing, serve, and enjoy!
