How To Make Chicken Taco Salad

Ingredients
- 2 chicken breasts, cooked and shredded
- 1 tbsp olive oil
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Salt and pepper, to taste
- 4 cups mixed salad greens
- 1 cup cherry tomatoes, halved
- 1/2 cup corn kernels
- 1/2 cup black beans, rinsed and drained
- 1/4 cup diced red onion
- 1/4 cup chopped fresh cilantro
- 1/4 cup shredded cheddar cheese
- 1/4 cup crushed tortilla chips
- taco dressing ingredients:
- 1/4 cup plain Greek yogurt
- 2 tbsp fresh lime juice
- 1 tbsp taco seasoning
- 1 tbsp chopped fresh cilantro
- Salt and pepper, to taste
Instructions

In a bowl, combine the olive oil, chili powder, cumin, garlic powder, onion powder, salt, and pepper. Add the shredded chicken and toss to coat.

Heat a skillet over medium heat and cook the chicken until warmed through, about 5 minutes.

In a large bowl, combine the salad greens, cherry tomatoes, corn, black beans, red onion, cilantro, and cheddar cheese.

In a small bowl, whisk together the Greek yogurt, lime juice, taco seasoning, cilantro, salt, and pepper to make the taco dressing.

Add the chicken to the salad bowl and drizzle with the taco dressing. Toss to combine.

Divide the salad among 4 plates and sprinkle with crushed tortilla chips.
