How To Make Chicken Mesclun Salad

Plant-based chicken, juicy pears, and sharp-spicy gorgonzola cheese is tossed with bright greens to yield this tasteful mesclun salad!

  • cupsMorningstar Farms® Meal Starters™ Chik’n Strips
  • ½cupolive oil vinaigrette salad dressing
  • 2tbspfresh basil,chopped
  • 1tbspolive oil
  • 1large sweet onion
  • 1tspsugar
  • 1red pear
  • 6cupsmesclun,or torn mixed spring greens
  • ¼cupwalnut pieces
  • ¼cupgorgonzola cheese,crumbled


  1. In small bowl stir together salad dressing and basil. Set aside.

  2. In large nonstick skillet heat 2 teaspoons of olive oil. Stir in onion and sugar. Cook over medium heat for 8 to 10 minutes or until golden brown, stirring frequently.

  3. Stir in pear slices, Chik’n Strips, and remaining oil. Cook and stir for 1 to 2 minutes or until heated through.

To Assemble:

  1. Arrange the mesclun on 4 serving plates. Top with pear mixture.

  2. Sprinkle with walnuts and cheese. Drizzle with salad dressing mixture.

  3. Serve immediately, and enjoy!
