How To Make Charred Brussels, beetroot & bulgur salad

Ingredients
- 1 lb Brussels sprouts, halved
- 2 medium beetroots, peeled and diced
- 1 cup bulgur
- 2 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- Salt and pepper, to taste
- 1/4 cup chopped walnuts
- 1/4 cup crumbled feta cheese
Instructions

Preheat the oven to 400°F (200°C).

In a large mixing bowl, toss the Brussels sprouts and diced beetroot with olive oil, balsamic vinegar, salt, and pepper.

Spread the mixture on a baking sheet and roast for 25-30 minutes or until charred and tender.

Meanwhile, cook the bulgur according to package instructions.

In a serving bowl, combine the roasted Brussels sprouts, beetroot, and cooked bulgur.

Top with chopped walnuts and crumbled feta cheese.

Serve the salad warm or at room temperature.
