Ingredients

  • 1 lb Brussels sprouts, halved
  • 2 medium beetroots, peeled and diced
  • 1 cup bulgur
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • Salt and pepper, to taste
  • 1/4 cup chopped walnuts
  • 1/4 cup crumbled feta cheese

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. In a large mixing bowl, toss the Brussels sprouts and diced beetroot with olive oil, balsamic vinegar, salt, and pepper.

  3. Spread the mixture on a baking sheet and roast for 25-30 minutes or until charred and tender.

  4. Meanwhile, cook the bulgur according to package instructions.

  5. In a serving bowl, combine the roasted Brussels sprouts, beetroot, and cooked bulgur.

  6. Top with chopped walnuts and crumbled feta cheese.

  7. Serve the salad warm or at room temperature.
