How To Make Butternut Squash Salad

Ingredients
- 1 small butternut squash, peeled and cubed
- 4 cups mixed salad greens
- 1/4 cup dried cranberries
- 1/4 cup crumbled feta cheese
- 1/4 cup chopped walnuts
- 2 tablespoons balsamic vinegar
- 2 tablespoons extra virgin olive oil
- 1 tablespoon honey
- Salt and pepper, to taste
Instructions

Preheat the oven to 425°F (220°C).

Place the cubed butternut squash on a baking sheet, drizzle with olive oil, and season with salt and pepper. Toss to coat evenly.

Roast the butternut squash in the preheated oven for about 25 minutes, or until tender and slightly caramelized.

In a large salad bowl, combine the mixed greens, dried cranberries, crumbled feta cheese, and chopped walnuts.

In a small bowl, whisk together the balsamic vinegar, olive oil, honey, salt, and pepper to make the dressing.
