
How To Make Butter Bean Salad with Lime and Mint
Whip up a refreshing side dish in this butter bean salad recipe that tosses iron-rich butter beans in a minty lime-buttermilk dressing.

- 6cupsfresh butter beans,or 3 boxes 10 oz frozen baby lima beans
- ½cupextra virgin olive oil
- ¼cupfresh lime juice,plus 2 tbsp more
- ¼cupbuttermilk,plus 2 tbsp more
- salt and freshly ground black pepper,to taste
- 1cupmint,chopped

Bring a large saucepan of salted water to a boil. Add the butter beans and cook for 8 to 10 minutes until they are tender. Drain and rinse the beans under cold running water. Drain well and pat the beans dry.

In a large bowl, whisk the olive oil with the lime juice and buttermilk; season the dressing with salt and pepper. Add the beans, cover, and refrigerate for 2 hours. Fold in the mint before serving.
