
How To Make Bruschetta Stuffed Avocado
This bruchetta recipe is a new way to enjoy avocado for a healthy snack. Avocados stuffed with fresh tomatoes, basil, and onion tossed in olive oil.
Serves:
Ingredients
- 2largeRoma tomatoesripe, finely chopped
- 2tbspred onionfinely chopped
- 1tspgarlicminced
- 2tbspolive oil
- salt and pepperto season
- 2avocadosripe, peeled, seeded and halved
- Fresh basil leavesto serve, optional
- 2tbspbalsamic glazereduction, to drizzle
- 2tbspfresh basilchopped
- ¼cupparmesan cheeseshaved
Instructions

Combine tomatoes, onion, garlic, olive oil, salt and pepper in a bowl. Toss well to evenly combine all of the flavors.

Arrange prepared avocado halves onto a plate with fresh basil leaves.

Spoon the Bruschetta filling into each avocado half and drizzle with balsamic glaze. Top with chopped fresh basil and parmesan cheese. Serve immediately.
Balsamic Reduction:

Combine 2 teaspoons light brown sugar sugar (optional) with 1/2 cup vinegar in a small saucepan over high heat and bring to the boil.

Reduce heat to low; allow to simmer for about 5-8 minutes or until mixture has thickened and reduced to a glaze.

When making the balsamic glaze, allow plain balsamic vinegar to reduce for 12 to 15 minutes on low heat if you’re not using sugar.
