How To Make Blistered Sweet Potatoes with Herby Tuna

Ingredients

  • 4 medium sweet potatoes
  • 1 can of tuna, drained
  • 2 tablespoons of olive oil
  • 1 tablespoon of chopped fresh herbs (such as parsley, dill, or cilantro)
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 425°F (220°C).

  2. Pierce the sweet potatoes several times with a fork. Place them on a baking sheet and bake for 20-25 minutes, or until tender.

  3. In the meantime, in a mixing bowl, combine the drained tuna, olive oil, chopped fresh herbs, lemon juice, salt, and pepper. Mix well.

  4. Once the sweet potatoes are cooked, remove them from the oven and let them cool slightly.

  5. Cut each sweet potato in half lengthwise and then make a few shallow cuts diagonally across the flesh.

  6. Spoon the herby tuna mixture over the cut sweet potatoes, distributing it evenly.

  7. Place the topped sweet potatoes back in the oven and broil for 3-5 minutes, or until the tuna is slightly browned and crispy.

  8. Serve the blistered sweet potatoes with herby tuna hot, and enjoy!
